Bruschetta with Sicilian Pesto Trapanese, cherry tomatoes and Burrata

Filled with intense Sicilian Capuliatu tomatoes, 5 varieties of Sicilian Heirloom almonds & rich Pecorino cheese this is the ultimate pesto for jazzing up your Bruschetta.

Method

Take the Pesto Trapanese and place half the jar of Pesto in a bowl and leave to breathe for 10 minutes.
In the meantime, heat up the grill and slice the bread lengthways to get 4 x large slices for the Bruschetta, drizzle with a little olive oil and toast under the grill until lightly golden brown.

Wash and halve the cherry tomatoes and mix through the Pesto Trapanese, coating them well and place on top of the Bruschetta.

Drain the Burrata cheese and tear in pieces over the Pesto Trapanese cherry tomatoes. Finish with a drizzle of extra virgin olive oil and a sprinkle of sea salt.

Bruschetta with Sicilian Pistachio Pesto, Mozzarella, Basil & Lemon

The emerald gold of Sicily, harvested every 2 years our Sicilian pistachios are filled with intense sweetness and savoury notes, perfectly paired with creamy mozzarella, fragrant basil and sharp lemon this is our Sicilian twist on a classic Bruschetta.

Method

Take the Pesto di Pistacchio and open to allow the pesto to breathe for 10 minutes or to keep it even more simple, roast some pistachios and blitz with some good quality extra virgin olive oil, our Sicilian lemon infused olive oil is perfect for this as the lemon cuts through the oils of the pistachios.

In the meantime, heat up the grill and slice the bread lengthways to get 4 x large slices for the Bruschetta, drizzle with a little olive oil and toast under the grill until lightly golden brown.

Drain the Mozzarella cheese and tear into big chunks over the Bruschetta. Take a spoon and drizzle generously the Pesto di Pistacchio over the mozzarella and tear a few pieces of fresh basil leaves on top.
Finish with a drizzle of extra virgin olive oil, a sprinkle of sea salt and a light grating of lemon zest.

Pecorino with Sicilian raw honey & wild oregano

The simplicity and ease of this Stuzzichini is so impressive and the taste of the salty, creamy Pecorino paired with the sweet raw honey and fragrant oregano is perfectly matched.

Method

Take a serving platter and simply crumble the Pecorino into bite sized chunks. Drizzle over the raw Sicilian honey with wild oregano and serve!

Anchovies with Bread & Butter

Salty anchovies, creamy butter and crisp crunchy bread – a culinary match made in heaven.

Method
