The Classic Sicilian Pasta Trio
Our 3 classic Sicilian pasta shapes are produced by our friends at Libera Terra (“Freed Land”) who champion organic and sustainable farming on hundreds of hectares of land taken from mafia organizations in Sicily, Apulia, Calabria and Campania. The organic durum wheat used for this Pasta is sown between November and January as part of seasonal rotation farming practices for sustainability.
La Busiata is typical of western Sicily. Its name derives from the term “busa” which, according to some, refers to knitting needle and, according to others, the stem of the disa, a Mediterranean grass. To prepare the Busiata by hand, the dough was rolled around the “busa”, giving it the characteristic corkscrew shape. We recommend serving this with a Sicilian classic, Pesto Trapanese.
Casarecce, a traditional shape from Sicily, are short twists of Pasta with curled edges and a groove down the middle to capture all your delicious sauce. We recommend serving this with a Sicilian classic sauce from Catania, alla Norma. The Pasta is flat, and bronze drawn giving a coarser, porous texture which helps the sauce or pesto bind to the Pasta shape creating an authentic flavoursome perfect bite with every bite.
Turbanti (“turbans”), a unique shape from Sicily, are small flat twisted curls of Pasta which capture the sauce and pesto inside, perfect with our family Sugo di Pomodoro.
Each 500g bag of pasta serves 4 portions of pasta.
