A hard, salted matured sheep cheese. It has a creamy, mild, salty nutty flavour and maintains a unique freshness from the milky quality of ricotta but with a crumbly texture. Firm enough to grate, crumble or add to salads in place of feta. We love it with our Sugo alla Norma!
