A Sicilian hard cheese produced from cows of the Modicana breed, raised exclusively on fresh grass or hay in the provinces of Ragusa and Syracuse. It is one of the oldest cheeses in Sicily dating as early as 1500. It has a status of DOP (Denominazione di Origine Protetta), which means Protected Designation of Origin. The flavour is quite unique and complex, with spicy notes of pepper with butter and a chewy open texture. Perfect for grating or nibbling with a full bodied glass of red wine such as Nero D’avola.
