Cannolicchi Pasta are shaped like razor clams. The dough has a coarse, porous texture which helps the sauce or pesto bind to the Pasta. This creates an authentic flavoursome bite.
We recommend this pasta with our Sicilian Sugo di Pomodoro sauce and Pecorino Cheese for a simple yet tasty dinner. Another dish we love is our traditional Pasta Ca Nnocca recipe featuring peas and anchovies.
More about the pasta: This Free Terra Sicilian organic, wholemeal Cannolicchi Pasta is the result of the collaboration with Giglio Lab, the small pasta factory of the Ucciardone prison in Palermo, which promotes job placement and the re-education of prisoners.
Libera Terra (“Freed Land”) champions organic and sustainable farming on hundreds of hectares of land taken from mafia organizations in Sicily, Apulia, Calabria and Campania. The organic durum wheat used for this Pasta is sown between November and January, in rotation with legumes, vegetables and forage. The semolina is cold pressed (-40°C) and this busiate Pasta is slow dried (up to 30 hours) at a low temperature (50°C) to preserve the organoleptic characteristics of the ingredient.
