The organic durum wheat used for the production of this semolina is sown between November and January, in rotation with legumes, vegetables and forage in the heart of Sicily.

The control of foreign herbs is carried out with summer plowing and false sowing, without any use of synthetic substances. The harvest takes place when fully ripe, between mid-June and late July, depending on the year and the altitude.

In order to preserve the organoleptic characteristics of the raw material, the Organic Durum Wheat Remilled Semolina is cold pressed and then packaged in a protective atmosphere.
